Secret to a Meaningful Season – Simplicity!


As a business owner, wife and mother I get energized by being creative. Creating beauty in food, décor and meaningful moments helps me navigate professional challenges during the week. And I’ve learned over the years that simple is better for everyone. My family and guests enjoy the occasion more if I can enjoy it more too! Rarely do you need to make anything with ingredients that require too many stores and too many steps.

Twice this December I’ve made a delicious dessert –and you guessed it …. It’s so simple. I love any recipe that’s delicious and so easy you can remember it in your head!

You can make this chocolate espresso mousse the night before, place it in a lovely serving dish, garnish it to add panache and NO one will know that it took minutes not hours. Plus it’s dairy free and worry free!

1.      Place in a blender:

6 oz of semi sweet chocolate chips

¼ teaspoon of espresso powder

2.      Pour in 2/3 cup of boiling water and process for 1 minute in your blender.

3.      Add 3 egg whites and blend for 1 minute. Pour in serving dishes and chill overnight or at least 4 hours.

4.      Add lemon juice to whipped cream or non dairy whip and a spritz of lemon peel.

5.      Put whipped garnish on mousse before serving.

6.      You can add a delicate cookie to serve, a candy or whatever suits your creative fancy or color scheme.

7.      Serve with relaxed love and laughter.

8.      Makes approximately 4 servings.
